Therefore, behind every dish, game, or decorated area was a process of brainstorming, task assignment, product preparation, and operational coordination carried out by the students themselves.
When each booth carries a distinct color
Stepping into the fair area, participants could easily feel the lively atmosphere created by the diverse culinary booths. Each group chose a unique concept, ranging from naming and menu design to space decoration and customer communication.

If “Ghien Mi Tron” drew attention with familiar and easy-to-enjoy dishes, “Flying Penguins” served crispy, hot fried chicken and French fries alongside a humorous tagline: “OMG, it’s insanely delicious!”. Meanwhile, “Yum Stop” created a cozy, familiar feel with black sticky rice and grilled pork—hot, fragrant dishes perfectly suited for the lively festival atmosphere.

Not stopping at modern delicacies, “NIIE Fair 2026” also introduced flavors closely tied to Vietnamese culture. The “Mien Tay Vao Ha” booth introduced traditional folk pastries and Southwestern regional cuisine, allowing participants to experience the rustic, generous spirit of the Southern region.

Another notable stop was “Bep Nho” with mashed cassava served in both sweet and savory variations. From a familiar ingredient, students creatively transformed it to offer a culinary experience that was both comfortable and novel.

Besides exploring food, visitors could try their luck at game stalls by “Chill Phet” and “Gian hang Ngu Sac”. With simple rules and exciting reward mechanics, these challenges quickly attracted energetic crowds of student players and cheerers.

A special feature at “NIIE Fair 2026” was the booth run by international students from Laos. The space highlighted signature traditional dishes such as Tam Mak Hoong (Lao papaya salad) and Laap—a dish symbolizing good luck and often regarded as the national dish of Laos.

Behind the joyful atmosphere of NIIE Fair was serious preparation by students in their Sales Management and Event Management courses. Groups worked together to select products, identify target customers, calculate costs, build sales pitches, and directly operate their booths throughout the event.

Through real-time interactions, students had opportunities to observe customer reactions, listen to feedback, and flexibly adjust product presentation strategies. From an event organization perspective, students coordinated timelines, venues, personnel, decorations, and handled emerging situations on the spot. In doing so, textbook concepts transformed into concrete experiences, helping students gain deeper insights into full-scale event execution. Even more meaningfully, following the event, teams and booth holders will dedicate 100% of their profits to charitable activities.
